Cookies and brownies have been dessert staples in America for years, with their sweet, chocolatey flavors captivating and stealing the hearts of Americans. But what people do not know is that when these two staples are mixed, it creates a dessert that is just as good, if not better. Cookie brownies, also called “Crownies” or “Brookies” for short, are just what they sound like – a mixture between cookies and brownies. Crownies combine that sweetness of a chocolate chip cookie with the richness of the brownieThese sweet treats are simple to make, only taking an hour or so to make a full batch.

COOKIE DOUGH 

  • 3/4 cup unsalted butter melted and cooled at least 10-15 minutes¹ (170g) 
  • 2/3 cup tightly packed brown sugar light or dark (135g) 
  • 1/4 cup white sugar 50g 
  • 1 egg + 1 egg yolk room temperature preferred 
  • 1 teaspoon vanilla extract 
  • 2 cups all-purpose flour 250g 
  • 1 teaspoon cornstarch 
  • 1/4 teaspoon baking powder 
  • 3/4 teaspoon salt 
  • 1 cup semisweet chocolate chips 170g 

BROWNIE BATTER 

  • 3/4 cup unsalted butter cut into Tbsp-sized pieces (170g) 
  • 1/2 cup semisweet chocolate chips 90g 
  • 1/2 cup natural cocoa powder 50g 
  • 1/2 cup sugar 100g 
  • 1 cup light brown sugar firmly packed (200g) 
  • 2 large eggs + 1 egg yolk room temperature preferred 
  • 1 teaspoon vanilla extract 
  • 1/2 teaspoon salt 
  • 1 cup all-purpose flour 125g 
  • 1/2 cup mini chocolate chips optional (150g) 

 

Procedure- 

COOKIE DOUGH 

  1. Combine melted, cooled butter and sugars in a large bowl and stir well. Add egg, egg yolk, and vanilla extract and stir again to combine. Set aside. 
  2. In a separate bowl, whisk together flour, cornstarch, baking powder, and salt. 
  3. Add dry ingredients to wet and stir until completely combined. Stir in chocolate chips. Set aside and prepare your Brownie batter. 

BROWNIE BATTER 

  1. Combine butter pieces and 1/2 cup chocolate chips in a large heat-proof bowl. Transfer to microwave and heat in 20-second intervals, stirring very well in between until chocolate and butter are completely melted, and mixture is smooth. 
  2. Add cocoa powder and stir well. 
  3. Stir in sugars. 
  4. Add eggs, egg yolk, vanilla extract, and salt and stir to combine. 
  5. Add flour and stir until well mixed. If desired, stir in mini chocolate chips. 

ASSEMBLY 

  1. Alternate dolloping large spoonfuls of cookie dough and brownie batter into baking dish. Use a knife to swirl through both doughs and make sure the batter is in an even layer. 
  2. Transfer to 350F (175C) oven and bake for 35-40 minutes or until a toothpick inserted in the center comes out with a few moist crumbs or clean (make sure you are not sticking the toothpick into a chocolate chip!). Take care to not over-bake your Crownies or they will be dry and crumbly once cooled.
